Poke bowl



When I moved to the Netherlands 2 years ago I was pleasantly surprised to see that Dutch people eat A LOT of raw fish. All around you could find various sushi restaurants, dozens of options of eating out or ordering, and what I think surprised me the most was the fact that you could buy relatively cheap and good quality sushi from the supermarket.

After a while the trend emerged to the so called "Poke Bowl" which I have first heard of when I saw a restaurant delivering it. What is a Poke Bowl? Basically, "Poke" represents a traditional Hawaiian dish which consists of raw fish cubes mixed with oils and spices and served as an appetizer or main course. This dish later evolved into modern version, known as "Poke Bowl", which is a mix of raw fish, rice and vegetables. It makes you think of it as a deconstructed sushi roll. Take the fish, rice, seaweed and whatever else you add to your sushi roll and put it in a bowl with some dressing, like you would do to a regular salad, and taa-daa, here you have it.

What I personally love about this dish is the freshness of the ingredients and that I feeds you without being too heavy. Below I propose my favorite healthy, classic version which takes no more than 15 minutes to prepare.


Ingredients (for 2 portions):
  • 200 g smoked salmon;
  • 1 medium carrot;
  • 100 g seaweed salad;
  • 1 ripe avocado;
  • 1 spring onion;
  • 1/2 English cucumber;
  • 200 g steamed rice;
  • 150 g soy beans; 
  • soy sauce;



TIP for those of you living in the Netherlands!

You can easily find all these ingredients at Albert Heijn, that's where I bought mine from. They always have fresh soy beans, smoked salmon cubes which go right into your dish and one tasty seaweed salad. Moreover, for this recipe I used Basmati Rice form Tilda, which already comes steamed, you don't have to cook it anymore. Getting all your all ingredients from one place and ready to be served it's really convenient and it saves you a lot of time.

 I started by preparing the vegetables. I finely chopped the spring onion, removed the cucumber's seeds and sliced it in small cubes, sliced the avocado and peeled thin strips of carrot. *If you are not getting your rice already steamed, prepare it according to the packaging instructions. Then I added all of them in bowl together with the rest of the ingredients, sprinkled some soy sauce and that's it. Super fresh, healthy, quick and delicious meal.

Salau pane cu sos Tartar si cartofi evantai

Dupa ce petrec ore in bucatarie imi place sa ma bucur de ceva spectaculos, iar acest preparat nu m-a dezamagit deloc. Salaul este un peste simplu, cu carne frageda si fara prea multe oase, dar foarte gustor, iar servit cu garnitura potrivita este un adevarat deliciu. Am ales sosul tartar pentru ca, dupa gustul meu, completeaza perfect preparatul, dandu-i nota acrisoara care mai lipsea.

Ingrediente:
  •  fileuri de salau (1-2/portie)
  • 5 Lg faina
  • sare
  • piper
Pentru garnitura:
  •  cartofi mari (1-2 /portie, in functie de cat de pofticiosi sunteti)
  • o mana de verdeturi tocate marunt (ceapa verde, marar, patrunjel)
  • 100 g branza rasa ( cascaval, cheddar, pecorino)
  • unt
  • sare si piper
Pentru sos:
  • maioneza din 2 galbenusuri 
  • 1 Lg mustar Dijon
  • o mana de verdeturi tocate
  • 10 catraveti murati Cornichon
  • 1 Lg capere
  • zeama de lamaie
  • sare si piper
Desi denumirea de "cartofi evantai" suna sofisticat, ei sunt la fel de usor de facut ca si niste cartofi copti obisnuiti. Dupa ce i-am curatat de coaja si i-am spalat, i-am crestat, fara sa ii feliez complet, astfel incat aspectul lor aduce cu un evantai. Intr-o craticioara am topit putin unt, iar cu ajutorul unei pensule am uns bine cartofii, pe care i-am tinut la cuptor aproximativ 1 h si 30 de minute. 


  Cu 20 de minute inainte de a fi gata i-am asezonat cu sare, piper si am adaugat intre felii cateva cubulete de unt, verdeturile si branza pe care le-am presat si deasupra, apoi i-am pus din nou in cuptor. Nu am asezonat cu foarte multa sare deoarece unele branzeturi sunt deja destul de sarate.

 Probabil va ganditi ca maioneza de cumparat va scuteste de ceva efort pentru acest sos. Intr-adevar, economisiti putin timp, dar o sa fiti dezamagiti cand vine vorba de gust. Maioneza gasita in comert nu prezinta nimic exceptional, este lipsita de orice gust si aroma, asa ca putina rabdare in plus face diferenta.

 Pentru maioneza am amestecat galbenusurile cu mustarul apoi am adaugat treptat ulei amestecand continuu cu mixerul la viteza mica. Cand maioneza a fost aproape gata am agauzat zeama de lamaie, sare si piper dupa gust. Pentru ca nu am mai folosit lamaie alaturi de peste  am adaugat mai multa in maioneza, fancand-o acrisoara. 
Am tocat apoi caperele si castraveciorii murati, si impreuna cu verdeturile le-am incorporat in maioneza.

Am scurs bine pestele de apa, apoi l-am tavalit prin faina amestecata cu sare si piper. L-am prajit in uleiul bine incins cca. 3 minute pe fiecare parte pana a prins o nuanta fantastica de auriu.



Va invit acum si pe voi sa va rasfatati cu acest preparat.
